Meet Jon and Ross

“Without Jon, Stoneleigh’s of Weybridge simply would not be happening..... Jon is one of the most standup and true guys I have ever met... what I said 18 months ago becomes more and more apparent... “they simply don’t make them like Jon anymore”! Jon’s passion and commitment is in a league of is own and I couldn’t be prouder.

Weybridge doesn’t know how lucky it is yet, you couldn’t wish for a better butcher and person....!

A little thank you from me.... working with you over the last 18 months has been an absolute joy and I can’t wait to see what the future will bring.... Leigh x”

Before Ross became a butcher he was a high-end chef for many years. Whilst Ross was climbing the culinary ladder he fell more and more in love with the butchers aspect of his trade and at the tender age of 25 he decided that he had an itch to scratch. And so he threw down his chefs hat and took the leap to became a butchers apprentice  (a very brave move).

After 4 years of hard graft and learning Ross has become one of the nicest and most well rounded butchers ever to cross our path.  As well as being a fantastic butcher Ross has amazing knowledge of cooking and is always delighted to share his passion for cooking an incredible plate including recipes, ingredients & methods!

Ross’s favourite cut is a beef short rib..... a hearty cut on the bone full of fat and flavour. He loves to make a beef short rib chilli.... slow cooked with plenty of cumin, paprika, ancho chillis and finished off with dark chocolate and rich salted butter for the ultimate velvet finish.

His favourite tool, like me, is his filleting knife (he still uses his very first one) however you should see his smile when he picks up his new mega steak knife!
